Easy Fish Salsa Sandwich

I’ll admit that I can be a lazy and sometimes impatient eater/maker in the kitchen but if there’s one thing that bothers me, it’s to be completely sloppy and disinterested with what goes down the tummy. Instant and frozen seafood are mean to make things easier and nothing is more satisfying that turning them into more than just, you know, plain food. So here’s my take on a quick and easy to make Fish Salsa Sandwich. I swear I got hungry again after reviewing through my photos to post. The photos, altho only shown one here were taken with VSCO camera – so simple!

Serves 1

What you’ll need

1 piece    Frozen breaded fish fillet
25g          Salted butter
2Tbsp     Olive oil (I used walnut oil for a nutty flavour)
2 Slices   Bread or Pain de Campagne
2 Stalks  Cilantro
1 Stalk    Mint leaves
3-4          Mini tomatoes
Lettuces or mixed greens
Lemon juice
Salt and pepper to taste


Chop tomatoes, cilantro and mint leaves into tiny pieces, combine and mix with 1 or 2 teaspoon of lemon juice depending how sour you want your salsa to be. Set aside.

In a skillet or non-stick pan, heat butter and oil until butter starts to bubble. Carefully place in the fish fillet and fry each side for about 3-6 minutes till brown and cooked inside. Season with pepper and let fry again for another 2 minutes each side. Remove from heat.

Prepare bread with some lettuces or mixed greens and then the fish on top. Carefully spread the salsa on top of the fish and place the other slice of bread and we’re done!

You can also serve as an open top sandwich. Either way they’re so good and healthy!
